What build system do AAA studios typically use? I know that Electronic Arts has their own build system, but is this common?

This is because each game has its own file structure, asset list, and scripts that must be processed alongside building the code in order to result in a functioning game build. Every major studio I've worked at generally has their own automated build system. These build systems are not shared between projects at the same publisher.

For games with exceptionally large amounts of statistical data in a game (e.g. long running MMOs, large (legacy system) RPGs), are there specialists for managing the databases for that? And are there any specific tools made for that kind of thing, or are typical database/spreadsheet software used?

ALT The more technically-minded people who are comfortable with raw sql script or spreadsheet analysis usually prefer to use those for expediency. These folks may write some helper batch scripts or create some automated scripts, but fully-featured tool suites are less needed.

How is code documented in AAA games? They just put comments/summaries above the fields names explaining what it does, or they use separate programs that contains all scripts/systems documentation?

It really depends on the project. For brand new games, the best we usually do is in-game comments and maybe some auto-documentation because we're writing a lot of new code as we go and time spent documenting is time not spent writing more code. For established franchises and lifestyle games (e.g. Call of Duty, Destiny, FIFA, Elder Scrolls, etc.)
